Beetroot Halwa


Ingredients:

  1. Beetroot Grated - 1 no
  2. Sugar - 1 cup
  3. Cashew Nuts - 7 to 8 nos
  4. Cardamon Powder - 1tsp
  5. Ghee - 2 to 3 tsp
  6. Milk - 1/2 cup
  7. Water required amount
Method:

In a pan ,fry the grated beetroot along with some ghee for 3 to 4 mins. Pour water to it & close with a lid & allow it boil for a while until the beetroot is cooked well , put it in simmer flame. Then add cardamon powder ,milk & sugar & stir occasionally & cook for another 5 to 6 mins untill the beetroot is cooked well(raw smell should go) in a medium flame. Now add the fried cahews ,if want add raisins, mixed nuts... Its ready to serve hot & u can store this halwa in refrigerator as well & serve it cool also ........

Onion Dosa & Simple Tomato Chutney

This is my post to
Shama Nagarajan 's FIRST COOKED FOOD EVENT --AUG'09 To tell u honestly i don't remember my first cooking . Actually before marriage i will help my mom in kitchen(yedupude) & will watch & learn her cooking ..... Basically i have more interest in cooking , crafts & trying out different new things.... all this interests came from my mom , actually she is very interetsed in trying out new recipes , crafts etc.. Anyway i will cook before marriage & have tried this onion dosa & chutney which came out good & my mom ,dad ,sis,bro encouraged me a lot .But seriously started cooking & experimenting after marriage ,truly it came out well ...as per my mom & mother-in-laws training .....My hubby will always encourages & tell me the mistakes i have done. It helps me a lot to correct my mistakes next time .......He is the Best encourager as well as a Best critic ......In my cooking experience i have tried out many dishes ,but that time i don't know about blogging , so i missed this opportunity ...Ok anyway now i started to share my cooking experience with u guys......Feeling happy about the encouragements from all u guys......Thank u ......




Ingredients:

Onion Dosa Preparation:

  1. Dosa Batter - 1 cup

  2. Onions (finely chopped) - 1 no

  3. Coriander Leves - 2 to 3 twigs

  4. Green Chillies - 1 or 2 nos

  5. Salt to Taste
  6. Oil

Method:

First finely chop the onions & to that add the chopped green chillies , coriander leaves,little bit salt & mix all together well & keep it aside . Heat a flat pan (dosa thava)in a medium flame for about 5 mins & then apply little oil to that heated pan & then pour tbsp of the dosa batter on the flat pan & immediately spread it evenly in a cicular shape. Now spread the onion mixture on the uncooked side of the dosa & wait for few seconds & then turn over the dosa & again smear some oil & cook in a medium flame ( do not keep high flame ,becoz onions will get burnt more) .Onion dosa is ready to serve with tomato chutney , coconut chutney ......

Tomato Chutney Recipe:
Ingredients:

  1. Tomato (large) - 1 no

  2. Onion - 1/4 no

  3. Garlic - 1 no

  4. Fennel seeds/sombu - 1 tsp

  5. Dry Red Chilli - 2 to 3 nos

  6. Curry Leaves - 4 to 5 nos

  7. Mustard Seeds - 1/2 tsp

  8. Urad dal - 1/2 tsp

  9. Red Chilli pOwder - 1/4 tsp

  10. Oil - 1 to 2 tsp

  11. Salt to taste

Method:
Wash & cut each tomato into 4 pieces & grind the pieces of tomato ,onion,garlic, 1/2 tsp fennel seeds/sombu ,dry red chillies,salt into a smooth paste .Do not add water while grinding . Heat oil in kadai ,to that add mustard seeds & allow it to splutter & then add 1/2 tsp of fennel seeds , urad dal ,curry leaves & fry it for 1 min .Now add the grinded smooth paste to this & add little bit of water & red chilli powder(depends on ur spicy) & check for salt & cook for about 8 to 10mins until the raw smell goes from it , keep the stove in a medium flame . This goes well with dosa,idly ......

Preparation of Dosa Batter:

Ingredients:

  1. Raw or boiled Rice or Idly Rice - 2 cups
  2. Urad dal - 1/2 cup to 3/4 cup
Directions:

If want u can add fenugreek seeds - 1 tsp ( i won't add it mostly ) even though the idly & dosa will come very nice ....

Wash the rice & urad dal & fill it with enough amount of water & soak overnight. Now drain the water from it & first grind the urad dal to a smooth paste by adding required amount of water to it . Then secondly grind the rice to a smooth paste(by adding required amount of water) & then mix them both together well in a large bowl by adding salt to it . Now leave the batter to ferment overnight or 7 to 8 hrs . After the fermentation stir the batter well & take 2 cups of the batter in another bowl ( add water if required)& now its ready to make dosa's .In the same batter u can make idli's also .......

Curd / Yogurt Rice

Ingredients:
  1. Cooked Rice - 1 cup
  2. Curd/Yogurt - 2 tbsp
  3. Green chilles - 2 nos
  4. Ginger(finely chopped) - 2 to 3 pinch
  5. Curry Leaves - 5 to 6 nos
  6. Mustard Seeds - 1/4 tsp
  7. Urad dal - 1/4 tsp
  8. Oil - 2to 3 tsp
  9. Milk - 1/2 to 1 cup
  10. Coriander Leaves (finely choppedd)
  11. Carrot (grated) - 2tbsp (Optional)
Method:
Heat oil in a small pan/skillet to that add mustard seeds & allow it to splutter.Then add urad dal & after a minute ,add the finely chopped ginger , green chillies ,curry leaves ,coriander leaves & (if want u can add grated carrot) & saute for a minute . Take the small pan /skillet off the stove & now pour this to the cooked rice in a bowl & to that add salt ,milk ,curd & mix well . Serve this with pickle, potato fries.....

Vazhakai Poriyal / Plaintain fry


Ingredients:

  1. Vazhaikai /Plantain(Raw Banana) - 1 no
  2. Onion (finely chopped) - 1/2 cup
  3. Red Dry Chilli - 1 no
  4. Turmeric Powder - 1/2 tsp
  5. Mustard Seeds - 2 pinch
  6. Curry Leaves - 4 to 5 nos
  7. Urad Dal - 2 pinch
  8. Shredded Coconut - 2 tsp
  9. Salt To Taste
  10. Oil - 2 tsp

Method:
Peel the outer skin of the vazhaikai/plantain & cut them into medium small cubes .Boil this cubes of vazhaikai in water along with some salt & turmeric powder & boil till soft & then strain the water & keep it aside . Heat oil in a skillet /kadai & add the mustard seeds, urad dal ,red dry chilli & saute for a while & then add the finely chopped onion, curry leaves & toss it till onions turn translucent .Then add the cooked vazhaikai/plantain pieces & mix all together gently. Check for salt & then finally add the shredded coconut & toss it well . Serve hot with rice, dal rice, sambar saadam.......

Vendaikai/Okra Fry

Ingredients:

  1. Vendaikai/Okra - 350 g

  2. Red Chilli Powder - 1 tsp

  3. Onion (finely chopped) - 1/4 cup

  4. Mustard Seeds - 2 pinch

  5. Garlic (minced) - 1 clove

  6. Oil for frying

  7. Salt To taste
Method:

Wash & cut the vendaikai/okra into small round pieces.Heat oil in a pan ,add mustard seeds ,minced garlic & fry for 2 mins & then add the finely chopped onions & fry untill it turns light brown . Now add the pieces of vendaikai/okra ,salt & fry for 5 minutes in a medium flame . Then add the red chilli powder & toss it well so that it is mixed well (if want add extra oil). Keep the stove in low flame & take care that they don't get burnt . Serve hot with Rasam saadham, Sambar rice ..........

Bean Sprouts Kuttu

Ingredients:
  • Bean Sprouts - 2 cups
  • Channa Dal - 1/2 cup
  • Toor Dal /thovaram paarupu - 1/4 cup
  • Moong Dal/Pasi parupu - 1 tbsp
  • Turmeric Powder - 1/4 tsp
  • Asafoedita - 1 to 2 pinch
  • Onion(finely chopped) - 1 tbsp
  • Red Dry chilli - 1 or 2 nos
  • Green Chilli - 1 no
  • Sambar Powder or Chilli Powder - 1/2 tsp
  • Coconut Shredded - 1 1/2 tbsp
  • Mustard Seeds - 1/4 tsp
  • Cumin Seeds - 1/4 tsp
  • Garlic (small clove) - 1 no
  • Urad dal - 1/4 tsp
  • Oil
  • Salt to Taste
  • Water required quantity
Method:
First Pressure cook channa dal,toor dal , moong dal , turmeric powder all together for about 2 to 3 whistles.Heat oil in kadai ,to that add mustard seeds, urad dal , dry red chilli ,cumin seeds, asafoedita,curry leaves & allow it to splutter .Then add the finely chopped onions & saute for a while ,then add the chopped bean sprouts to it & toss it for about 5 to 6 mins.In the mean time grind the coconut coarsely along with cumin seeds, green chilli, garlic & keep it ready . Now add the cooked dals & sambar powder to the bean sprout mixture & toss it well all together for while by adding required amount of water & salt to it . Then add the coarsely grinded coconut paste to it & allow it boil until the raw smell goes......This matches with rice, chapathi......

Vinayaka Chathruthi Celebration







Happy Vinayaka Chathruthi to all.......
Today is vinayaka chathruthi and it is celebrated all over India .When i was a kid in my mom home, we celebrate this vinayakar chathruthi in a very grand manner. For this we will buy a Vinayakar Idol ,which is made of clay ,along with this we will buy a colourful umbrella , flowers,mavilai ,thooranam (we will tie this in the entrance of the house & in pooja room).We will put beautiful kolams in front of the house ,in pooja room.... Then my mom will make different varities of kozhukatai (modak) which is considered to be Lord Vinayakar's favorite dish , sundal, vada, payasam & keep in front of the vinayakar & will do the poojas. After the pooja finished we will keep small amount of of prasaathams first to crow ,after it eats we will eat . At the third day after pooja we will immerse the idol in well or we can put it in sea. This is our tradition of celebrating Vinayakar chathruthi......Sweet remembrance of my childhood festivals celebrations.Now i celebrated this Vinayakar chathruthi with my husband here in US in a simple way. This time i made this umbrella by myself to the lord Vinayaka with the things at home......

Kozhukattai Recipe:
Ingredients:
  1. Rice Flour - 1 cup

  2. Shredded coconut - 1 cup

  3. Cardamon Powder - 1/4 tsp

  4. Grated Jaggery - 1 cup (u can extra if u want)

  5. Salt to Taste

  6. Sesame Oil - 2 tsp

  7. Water

Method:

First boil water in pan with salt to it & allow it to boil well .Now take the rice flour in a bowl & pour the boiling water (do not pour the boiling water fully ,add it little by little) to it & mix well with a spoon or spatula without any lumps till it comes to a soft dough(like chapathi dough) consistency & allow it to cool for 5 mins. Now for the filling ,mix jaggery ,shredded coconut ,cardamon powder in a bowl & keep it ready . After the dough is cooled, smear your hands with a little seasame oil & smoothen the prepared rice flour dough with your hand & make small balls out of this. Press the rice flour ball in ur palm and make a cup like & keep the coconut filling inside this and close it & leave a beak like appearence at the top . U can do any shape u want . Steam this Kozhukattai in the idli plates ( slightly rub the idli plates with some oil ) & pressure cook them .

Sundal Recipe:
Ingredients:
  1. Channa /Chickpeas - 1 cup

  2. Mustard Seeds - 1 tsp

  3. Oil - 1 tbsp

  4. Curry Leaves - 5 to 6 nos

  5. Dry Red Chillies - 1 or 2 nos

  6. Asafoedita - 1/4 tsp

  7. Coconut grated - 1/4 cup (Optionsl)

  8. Salt to Taste

Method:
Soak chana/chickpeas in water overnight.Pressure cook chana with some salt & enough water to it & cook until soft but not mushy. Drain excess water from cooked chana . Heat oil in a pan, add mustard and allow it to splutter. Then, add dry red chili, curry leaves and asafetida to it. Now add cooked chana/chickpeas to it & mix all well. Simmer for 3-4 minutes. If want u add grated coconut to the above and mix it well. check for the salt & turn off the flame.
Enjoy the Sundal its ready to eat ............

Cauliflower Manchurian

Ingredients 1:
  1. Cauliflower(small) - 1 no
  2. Onions (small) - 1 no
  3. Green Chilly - 2 nos
  4. Spring onions - 1/4 cup
  5. Capsicum - 1/2
  6. Garlic(finely chopped)- 2 nos
  7. Ginger (finely chopped)- 1/2 tsp
  8. Soya Sauce - 1 1/2 tbsp
  9. Vinegar - 2 tsp
  10. Coriander Leaves - 1 to 2 stk
  11. Sugar - 2 tsp
  12. Oil - 1 tbsp
  13. Salt to Taste

Ingredients 2: For the Batter

  1. CornFlour - 5 to 6 tsp
  2. Maida/AllPupose Flour - 1/4 cup
  3. Ginger Garlic Paste -1 tsp
  4. Red Chilli Powder - 1 tsp
  5. Egg - 1 no (Optional)
  6. Salt to Taste
  7. Oil for Frying Method:

First cut the cauliflower into medium small florets & allow it to boil in water for about 5 to 6 mins & remove from heat before its overcooked & then drain the water ,keep it aside.Combine all the ingredients mentioned under batter & prepare a thick coating batter, mix the Cauliflower pieces to that & see whether they are well coated , leave to stand for 5-10 mins .Heat oil in a deep bottomed pan & fry the cauliflower florets until it turns golden brown ,turn on both sides & fry it & set aside. In a wide pan ,heat 1 tbsp of oil & to that add the finely chopped ginger & garlic ,saute it for 2 to 3 mins & then add the onions ,green chillies & fry till onions turn translucent,then add the chopped spring onions,capsicum & toss it for few more seconds.Now add the soyasauce , vinegar ,sugar ,salt & mix all together well for 3 to 4 mins. Then add the fried cauliflower to it & toss it with the masala ,till it sticks well to the cauliflower (if want u can add water & make it to more gravy ) .Remove from heat & garnish it with coriander leaves......this goes well with coconut rice, Pulao, paratha........

Simple & Easy Potato Fry


Ingredients:


  1. Potato - 2 nos

  2. Chilli Powder - 1 tsp

  3. Salt to taste

  4. Oil - 1tsp

Method:

Peel the potato skin & chop the potatoes into small pieces. Heat 1/2 tsp oil in a skillet add the chopped potatoes & saute well with the oil for about 5 to 8 mins .Then add the chilli powder & salt to it & give a stir & add the other 1/2 tsp of oil to it & toss it well & close it with a lid , keep the stove in medium flame .Check it whether its not stick to the bottom of the pan by stirring occasionally, until potatoes turn golden brown and coated with spices & cooked well. Serve hot with curd rice,rasam saadham.......

Krishna Jayanthi Celebration


























Thattai Recipe:

Ingredients:

  1. Rice Flour - 2 cups

  2. Urad Dal - 3 tsp

  3. Butter - 1 tsp

  4. Asafoedita - 2 pinch

  5. Pottukadalai Or Chana Dal - 1 tsp

  6. CurryLeaves(finely chopped)- 5to6 os

  7. Oil for Frying

  8. SesameSeeds Or Cumin Seeds - 2 to 3 pinch

  9. Salt To Taste

Method :

First fry the urad dal in a pan until it turns light brown ,allow it to cool & grind it to a fine powder . In a bowl ,take the 2 cups of rice flour add the 2 tsp of urad dal powder , asafoedita,sesame seeds or cumin seeds, curry leaves, butter, potukadali or channa dal ( soak this for about an hour before adding ) ,salt & mix all together with required amount of water & make it to a dough.Make a lime size balls of the dough & keep it ready .Now place the ball in between the 2 oil greased plastic sheets & give a press with ur palm .Heat oil in a kadai & deep fry it until its well cooked on both the sides & turns crisp & golden color. Cool it & store it in a air tight containers for about 2 to 3 weeks.........


Seedai Recipe:

Ingredients:
  1. Rice Flour - 1 cup
  2. Urad Dal Powder - 2 tsp

  3. Asafoedita - 1 pinch
  4. Butter - 1/2 tbsp

  5. Sesame Seeds - 1 tsp

  6. Asafoedita - 2 pinch
  7. Shredded Coconut - 2 tsp

  8. Oil for frying
  9. Salt to Taste

Method:


Prepare the the Urad dal powder as mentioned above as in Thattai recipe .In a bowl take the 1 cup of flour , 2 tsp of urad dal powder , asafoedita, sesame seeds, grated coconut , butter & mix all together well by adding water carefully & make a stiff dough. Now roll the dough into smooth small balls by using our palm & put them in a paper towel or cloth . Deep fry the balls in hot oil at a medium flame ,until it turns golden & crisp. Drain the excess oil of the fried balls on a paper towel & allow it cool & then store in a air tight container for about 2 to 3 weeks......

Somaas Recipe:
Ingredients:

  1. Maida or All pupose Flour - 2 cups

  2. Ghee - 1/2 tbsp

  3. Salt to taste

  4. Oil for Frying

Filling Inside :

  1. Rava - 1/2 cup

  2. Shredded coconut- 3/8 cup

  3. Powdered Sugar - 1/2 cup (if want u can add extra 1/4 cup,depend on ur sweetness)

  4. Cardamon - 2 to 3 no

  5. Cashewnuts - 1 tbsp (Optional)















Got the recipe from one of my friend Buji....
Method:
In large bowl ,put the maida or all pupose flour ,salt & ghee & mix all together with required amount of water & knead it a soft dough ( not too soft) ,cover it & keep aside for 1/2 hour. In the meantime , heat pan & add the shredded coconut & roast it in medium flame till it turns light brown & leaves an aroma .Then remove from the pan & keep aside . In the same pan ,add the rava & roast it in medium flame till it turns light color & remove this from pan & keep aside . Now powder the sugar & cardamon together in a mixie & keep it ready . Mix all the dry ingredients seperately in a bowl that is the roasted rava & coconut , powdered sugar & cardamon , cashews (if u want u can add ) & keep aside . The filling is ready.
Divide the dough & shape it to small balls ( as we do for poori ) .Dust the balls with flour & roll each ball like a thin poori . Now put 2 tsp of filling in the centre of the thin poori & close it with the other end (it gives a semi-circle shape) First press the edges firmly with ur hand so that the filling won't come out while deep frying then use a fork & press it all over the edges so that we will get design in the edges.
Heat oil in a pan & fry the stuffed puri's until it turns golden brown in color .Turn them carefully on other side so that its cooked well on both sides. (be careful while turning ,1st cook on 1 side & then turn the other side to cook ,don't be hurry while turning ). Cool & store in a air tight container ............Enjoy

Spinach & Moong Dal Gravy

Ingredients:

  1. Spinach - 1 bunch
  2. Moong Dal - 1/2 cup
  3. Cumin Seeds - 1 tsp
  4. Garlic - 2 to 3 cloves
  5. Turmeric Powder - 1/4 tsp
  6. Mustard Seeds - 1/2 tsp
  7. Urad Dal -1/4 tsp
  8. Curry leaves - 4 to 5 nos
  9. Green chillies - 2 nos
  10. Dry Red Chillies - 1 no
  11. Onions(finely chopped)- 1/4 cup
  12. Oil - 1 tsp
  13. Coconut Milk(thick) - 1 to 2 tsp (Optional)
  14. Salt to Taste

Water Method:

First cook the 1/2 cup of moong dal with 1/4 tsp of turmeric powder in a pressure cooker leave it for 2 to 3 whistles & keep this ready ( if u don't have a pressure cooker ,u can cook the 1/2 cup moong dal in a pan with 3/4 cup of water until its cooked well.) .Wash & finely chop the spinach & keep it ready .Heat oil in a pan & add mustard seeds ,allow it to splutter .Then add the urad dal , cumin seeds , dry red chilli followed by slit garlic & roast it until it leaves aroma . Now add the finely chopped onions , slit green chillies , curry leaves & saute for a while till it turns tender . Then add the finely chopped spinach & saute well for about 5 to 6 mins. Now add the cooked moong dal along with required amount of water & salt , allow it to boil for about 5 to 6 mins in a low flame. Now add the coconut milk & boil for about 5 mins in low flame (coconut milk is optional).Check for salt & spice (if want extra green chillies while its boiling). This goes well with White Rice , chapathi's............


Note:

While cooking Spinach do not cover the pan with the lid ......Just my small tip.......

Tomato Rice

Ingredients:
  1. Basmathi Rice - 1 cup
  2. Tomato - 2 nos
  3. Onion (small) - 1 no
  4. Green Chillies - 2 nos
  5. Red chilli powder - 1/4 tsp
  6. Turmeric Powder - 1/2 tsp
  7. Ginger Garlic Paste - 1/4 tsp
  8. Fennel seeds - 2 pinch
  9. Mustard - 1 pinch
  10. Curry Leaves - 5 to 6 nos
  11. Coriander Leaves - 1 stk
  12. Cinnamon - 1 piece
  13. Cardamon - 1 no
  14. Cloves - 2 nos
  15. Bay Leaves - 2 nos
  16. Oil
  17. Salt To Taste

Method:

Wash & soak the rice for 15 to 20 mins . Heat oil in skillet ,add cinnamon ,cloves, cardamon , bayleaves ,mustard seeds, fennel seeds & fry it for a minute .In the mean time boil the 2 tomatoes in hot water for 5 to 6 mins & then take of from the heat & allow it to cool ,then peel the skin & smash it to a thick puree & keep it ready. Then add the ginger garlic paste & fry it till it turns light brown ,then add the green chillies Curry leaves,,onions & fry till the onions turn golden brown color. Then add the tomato puree & saute it well . After 5 mins add the redchilli powder, turmeric powder ,salt & mix it well & cook untill all mixed well & oil comes out on sides .At this stage add the soaked rice & give a stir . Boil 1 1/2 cup of (rice soaked )water & add this to the above mixture & stir well (check for salt ) & transfer this to pressure cooker & leave 3 whistles & pressure cook it . Another method u can directly cook in the same pan by closing the lid with alow flame . For every 6 mins check it & give a stir & cook properly . Stir in coriander leaves immediately before serving. This goes well with cucumber raitha .......
