Mango milkshake is one of my fav' ...So tried this milkshake in mango season...This milkshake is extra special bonanza becoz mango is from our tree....hurray....This is extremely versatile drink in this hot summer where we need mango & couple of things in a blender & our delicious shake is ready for our thirst... Delicious shake .... We know mango is heat ,but in this shake we r adding milk to reduce it right ,so all can take ....no worries ...<span style="background-color: white;">Enjoy friends</span><br />

<span style="font-size: large;"> </span>First wash curry leaves & keep it aside ...In kadai dry roast raw rice ,channa dal, coriander seeds ,cumin seeds,pepper ,fenugreek ,red chilles evenly for few mins until the raw smell goes & a nice aroma exists ..Allow it to cool ,then grind these fried ingredients along with curry leaves & required amt of water to a fine paste..Keep it aside .<br />
Heat sesame oil in a kadai, add mustard allow it to splutter, urad dal, fenugreek , add sliced garlic & finely chopped small onions & saute for a while until onion turns golden brown . Now add the grinded paste ,salt & required amt of water & saute for few mins till the raw smell goes away & wait till the oil oozes out on sides.. Now add the tamarind paste & allow the whole mixture to boil for 6 to 10 mins.Simmer the heat & allow it to boil to get a thick gravy..yep this is ready to taste....This goes well with hot rice, idly ,dosai...Very healthy , nutritious kuzhlambu....<br />

Add the tamarind juice & required amt of water , coriander leaves & allow it to boil .</i></span><br />

Check whether the channa dal is cooked well,mash it & allow it cool down for 15 to 20 mins.Then add the sugar & cardamom powder to it & mix all well together</span></em><em><span style="color: blue;"> . If the channa dal is hot,the sugar will melt & leaves out moistuer in it,so add sugar after the dhal is cool down.</span></em><br />
<em><span style="color: blue;"> After the dough( pooranam )becomes cool & easy to handle ,now make small balls (like size of a lemon)& set aside .Heat oil in deep frying pan ,once the oil is hot enough for frying ,take a ball dip it in the batter & drop it slowly in the oil .Make sure that the pooranam is coated well with the batter ,so that after dropping it in oil the inside sweet will not mess with oil.Fry golden brown,do not char the balls ,careful... Continue frying other balls in same method....Instead of this batter(rice +urad dal) my Mom will make with maida(all pupose flour), it will also tastes heaven....Enjoy serving this traditional dessert.......</span></em><br />

<span style="color: blue;">First cook pasta in salt water .In the mean time cut all the vegies & keep it ready . In a saucepan melt butter in medium heat & add minced garlic & fry for 2 mins. Now add finely chopped onions fry until light brown & then add mushroom & saute for 5 mins ,then add half of the chopped capsium ,little salt & stir all together . In a small bowl mix the flour & milk & make it to a creamy consistency . Pour this to the sauce pan & stir well with the vegies. Add extra 1 cup milk ,stir & cook ,stir frequently until the sauce boils & thickens. Now add the boiled pasta & toss it ,add the half capsicum ,cheese & pepper powder stir all well together ,check for salt .Sprinkle with extra cheese ......My favourite yummy pasta...</span><br />

<strong>Method:</strong><br />
First soak Raw rice , Boiled rice & fenugreek for minimum 2 to 3 hours.Then grind it to a smooth thick paste . Then take the rice flour in a seperate bowl & add 1/4 cup of hot water & mix it together well(like batter) .Then mix this rice flour mixture to the above grinded smooth paste mixture ,salt & mix together well & make it like Idli batter consistency & leave the the batter overnight , so that the next day it will be ready to put the panniyaram . Now make a jaggery syrup & mix it to the above batter (like thosai batter (maavu) consistency ) . Heat the Panniyaram pan & grease it with oil & pour the the batter into each hole (hollow) carefully ( do not overfill the hole , pour half the quantity of each hole). Now close the Pan with the lid & cook for 5 to 6 mins & keep it in medium flame .Then turn each panniyaram with a wooden stick(which will be give along with the panniyaram pan when u buy it ) or knife or spoon & cook the other side for another 5 to 6 mins in a low flame ( do not keep in high flame ) . Serve hot with chutney as a evening snack or morning breakfast........ Enjoy<br />

<strong>How to make Jaggery Syrup:</strong><br />
<br />
Add the Jaggery to 1/4 cup of water , cardamon & allow it boil for 5 mins untill the jaggery is melted completely .Then allow it to cool down & later add this syrup to the batter & make it like dosai maavu consistency.<br />

<span style="color: blue;"> Take the flour in a bowl ,add salt & give a mix .Now add water little by little & make it to a soft dough ,knead it well ,the dough should not be too sticky or too dry make it to a soft dough .In the mean time heat oil in a kadai . Now knead the dough little again & make it to small balls & dip slightly in the hot oil & roll it to a round shape ( shape is ur wish ) . Repeat the process to roll all the balls. Now put the rolled shaped poori into the hot oil , it will puff up immediately , if not slightly pour oil over it with a spatula ,then it will swell up , flip it & cook on the other side till light brown ....Pufffy poori's are ready to taste .........</span><br />

<span style="color: red;">First wash the peas &keep aside.Heat a 1/4tsp oil in a wok/ kadai & fry the black eyed peas for about 5 to 6 mins. Then pressure cook this fried peas in a pressure cooker until it become soft (do not overcook).Heat oil in a wide pan & add the mustard seeds leave it to splutter ,add urad dal & red chillies & fry till it </span><br />
<span style="color: red;">turns light brown. Then add the chopped onions,curry leaves ,fry till onions become transparent . Now add the cooked peas ,salt & coriander leaves & saute for 5 to 6 mins.Add the shredded coconut & mix </span><br />
<span style="color: red;">well .Add the chopped mango pieces to it & mix all well together.Turn off the heat & transfer this to a bowl & serve it hot .... </span><br />

Wash & clean the prawn ,marinate with litte bit of salt & turmeric powder for 5 to 10 mins.Heat oil in a skillet/kadai ,add ginger garlic paste fry for 1 min ,then add the finely chopped onions,curry leaves, 1/2 stk of coriander leaves & fry until onions turn golden brown .Now add the chopped tomatoes & mix well with the onions ,add red chilli powder,coriander powder, turmeric powder & mix all well together ,stir well ,leave the gravy for 5 to 6 mins till it gives out oil on sides . Now add the prawns & mix well with the gravy .,add salt & cook for about 8 to 10 mins in low flame . <span style="color: red;">First peel the outer rough layer of the yam/senai & cut into small cubes & wash it thoroughly .Now boil the yam /senai pieces in water for 10 to 15 mins until it is cooked & becomes soft & tender(do not over cook & spoil the shape of the pieces) ,then drain the water as soon as its cooked.To this add red chilli powder ,salt </span><br />
<span style="color: red;">& mix it well with hand ,so that the pieces are coated with chilli powder .Heat oil in a frying pan ,add mustard seeds allow it to splutter,add the crushed garlic , fennel seeds, urad dal ,fry for 3 sec until the dal turns golden brown & then add the chopped onions ,curry leaves & saute for few seconds till the onions turn light brown .Now add the cooked yam/senai pieces & mix all well together.Close the pan with a lid & cook </span><br />
<span style="color: red;">in a medium flame till the raw smell of the chilli powder goes from it & it turns to golden brown color . Inbetween add extra spoons of oil & give a stir ,so that, it won't get stick to the bottom. Stir carefully ,do not spoil the shape of the cubes.Fry until it turns golden brown ,for reference see the above above picture ....Garnish it with curry leaves & serve it hot ... Goes well with sambar rice , rasam sadham ,curd rice .This is a best lunch box side dish ..... </span><br />

<strong><span style="color: blue; font-size: large;"> </span></strong><span style="color: #cc0000;"><em>Wash & cut the top & bottom of the beans & then chop beans into small pieces .Heat oil in a pan ,add mustard seeds ,wait till it splutter.Then add the urad dal ,dry red chillies & fry for 1 min ,now add the chopped onions ,curry leaves & fry until onions turn tender .Then add the chopped beans & give a stir .Then add salt ,turmeric powder & 1/4 cup water ,close the pan with a lid & cook in a medium flame . Stir cook until the beans turns tender.If want add shredded coconut at the end ....Very simple porriyal is ready to eat ...</em></span> <br />
