Mango Milkshake




Mango milkshake is one of my fav' ...So tried this milkshake in mango season...This milkshake is extra special bonanza  becoz mango is from our tree....hurray....This is extremely versatile drink in this hot summer where we need  mango & couple of  things in a blender &  our delicious shake is ready for our thirst... Delicious shake .... We know mango is heat ,but in this shake we r adding milk to reduce it right ,so all can take ....no worries ...Enjoy friends
Ingredients:

  • Mango - 1 no
  • Milk - 1 cup
  • Sugar - 3 to 4 tbsps (depends on ur sweetness)
  • Icecubes 
Method:
          Wash & peel the mango ,cut it into small cubes put in a juicer jar ,add sugar , ice cubes  & blend well ,if want add extra water ...Now our milkshake is ready ...We can serve it with a ice cream on top too...Serve it chill...

Karuveppilai Kozhlambu / Curry Leaves Kozhlambu

Ingredients:
  • Curry Leaves - 2 cups
  • Small Shallots(onions) - 1/2 cup
  • Garlic  - 1 full 
  • Urad Dal - 1 tsp
  • Mustard seeds - 1/2 tsp
  • Fenugreek seeds - 1/4 tsp
  • Hing/asafoetida  - a pinch
  • Tamarind  - small sized lemon ball
  • Sesame oil - 1to 2 tbsp
  • Salt to taste

Dry Fry Items to  Grind :
  • Raw Rice - 1 tsp
  • Channa Dhal - 1 tsp
  • Dry Red Chilles - 3 to 5 nos
  • Pepper - 1/4 tsp
  • Fenugrreek Seeds - 1/4 tsp
  • Cumin Seeds - 1tsp
  • Coriander Seeds - 1tsp



Method:
      First wash curry leaves & keep it aside ...In kadai dry roast  raw rice ,channa dal, coriander seeds ,cumin seeds,pepper ,fenugreek ,red chilles  evenly for few mins until the raw smell goes & a nice aroma exists  ..Allow it to cool ,then grind these fried ingredients along with curry leaves & required amt of water to a fine paste..Keep it aside .
            Heat sesame oil in a kadai, add mustard allow it to splutter, urad dal, fenugreek , add sliced garlic & finely chopped small onions & saute for a while until onion turns golden brown . Now add the grinded paste ,salt & required amt of water & saute for few mins till the raw smell goes away & wait till the oil oozes out on sides.. Now add the tamarind paste & allow the whole mixture to boil  for 6 to 10 mins.Simmer the heat & allow it to  boil to get a thick gravy..yep this is ready to taste....This goes well with hot rice, idly ,dosai...Very healthy , nutritious kuzhlambu....



Hope y'all like this recipe...We can refrigerate for 3 to 4 days ....If want we can make it loose gravy too by adding extra water ...Enjoy friends...

Pineapple Jelly

Jelly preparation is too easy becoz we  get the jelly packet in market..u can buy ur favourite flavors  ....just tried for fun & it came out awesome....
There will be 2 separate small packets in the pack ...Take bowl ,mix the 2 packets together & in the mean time boil 500ml of water , now ad the boiled water to the dry powder in the bowl & mix well ,allow it to set for 45 mints & refrigerate before serving ......I bought pineapple flavor , there r many flavors as u like .....

Egg Urundai Kuzhambu....( Egg Balls in Tamarind Gravy)

This Egg urundai kuzhambu is a bit lengthy process....But it tastes awesome ..we love it with hot rice ..
My MIL method...
Ingredients:

  • Egg   - 6 nos
  • Onions - 2 nos (big)
  • Tomato  - 1 no (big)
  • Tamarind  - 1 (small lemon sized  ball ) 
  • Fennel Seeds - 1/4 tsp
  • Fenugreek Seeds - 2 pinch 
  • Green Chilly - 2 to 3 no
  • Cornflour - 1 to 2 tsp 
  • RedChilli Powder - 2 tsp
  • Coriander Powder - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Curry Leaves for seasoning 
  • Coriander Leaves 
  • Salt to Taste 
  • Oil

To Grind :

  • Coconut - 2 to 3 tbsp
  • Roasted Gram (pottu kadalai) - 1 bsp
  • Fennel Seeds - 1/4 tsp 

Method :
              First grind coconut , roasted gram plus fennel seeds to a semi coarse mixture .While grinding sprinkle only little water ..In bowl beat 5 eggs & the add the coconut mixture & mix together well .  
       
          Heat oil in a pan add finely chopped onions , green chillies  & fry till  the onions turns light brown .Now add the coconut  egg mixture to it & mix all well together ..don't forget to add required amt of salt to this ...do not over fry this mixture , it should have little moisture then only we can make balls ..Allow it to cool ,then add 1 more raw egg & 2 tsp of cornflour & mix well & make lemon size balls out of this & keep aside ....
              Heat oil in a kadai ,add fennel seeds ,fenugreek & allow it to pop .Then add the finely chopped onions ,curry leaves ,1 green chilly & fry till light brown. Add  sliced tomatoes & little salt & mix all well together .Now add the turmeric powder, chilly powder, coriander powder & fry until the oil oozes out . Add the tamarind  juice & required amt of water , coriander leaves & allow it to boil .
 Once its started boiling ,simmer the gas & gently put the balls one by one ,so that it won't stick together.. Allow it to cook for 6 to 8 mins...garnish with coriander leaves ....goes well with hot rice ,dosa, idly....yummmm

Susiyam (traditional south Indian snack)


Susiyam or seeyam is a traditional sweet dish famous in south tamilnadu mainly in Nagerkoil,Trinelveli, Kariakudi & will be made for festive seasons.....My Mom method will be diff from my in-law method...but both tastes awesome...The difference is  the dipping batter.Its all time favourite for me & my hubby......Even in my mom's home its the favourite sweet for all of them ...We love when my mom makes this sweet,while she's preparing itself we will finish half of the pooranam....those r golden days.....Now same here in my home too we love it .....Its all time favourite sweet.....
this is my in-law method...

Ingredients:
  1. Channa Dal    -  2 cups
  2. Sugar       -  2 cups to 3 cups
  3. Cardamom - 4 to 5 nos
  4. Raw rice  - 1/2 cup
  5. Urad Dhal - 1/2 cup
  6. Shredded Coconut  - 1/4 cup(Optional)
  7. Salt a pinch
  8. Oil for frying  
Method:
        First soak the raw rice along with urad dal for 2 hrs. In the mean time pressure cook the channa dal with 1 cup of water for 3 to 4 whistles...Now grind the raw rice & urad dal like idly /dosa batter ( not too soft)& keep it ready . Check whether the channa dal is cooked well,mash it & allow it cool down for 15 to 20 mins.Then add the sugar & cardamom powder to it & mix all well together . If the channa dal is hot,the sugar will melt & leaves out moistuer in it,so add sugar after the dhal is cool down.
           After the dough( pooranam )becomes cool & easy to handle ,now make small balls (like size of a lemon)& set aside .Heat oil in deep frying pan ,once the oil is hot enough for frying ,take a ball dip it in the batter & drop it slowly in the oil .Make sure that the pooranam is coated well with the batter ,so that after dropping it in oil the inside sweet will not mess with oil.Fry golden brown,do not char the balls ,careful...    Continue frying other balls in same method....Instead of this batter(rice +urad dal) my Mom will make with maida(all pupose flour), it will also tastes heaven....Enjoy serving this traditional dessert.......

Vegetable Cutlet



INGREDIENTS:
  • 4 to 5 Potatoes boiled & smashed
  •  3 cups of vegetables, finely chopped , boiled and cooked well ( beetroots, carrots, peas, cabbage,etc can be used )
  •  1 Onion finely chopped
  • 2 to 3 green chillies finely chopped
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala powder
  • 1/2 tsp of red chillie powder
  • 1/2 tsp of turmeric powder 
  • 1tsp of chopped ginger & garlic
  • 1 tsp ginger-garlic finely chopped
  • 1 tsp chopped coriander leaves
  • 1 tsp chopped cashewnuts
  • 1to 2  eggs well beaten
  • 1 to 2 cups of maida
  • 1to 2 cups of breadcrumbs
  • Salt to taste
  • Oil for shallow frying the cutlets
Method:              
                  Heat oil in a pan add cumin seeds, finely chopped ginger & garlic & toss it. Add onion and sauté for two minutes,add green chillies, red chilli powder, turmeric powder,garam masala  powder and sauté for a 3 more minutes.Now add the cooked vegies , salt and continue to sauté for two minutes& mix all well. Add crushed cashewnuts  and sauté for two minute & set aside. Take mashed potatoes in a deep bowl,add the vegetable mixture and mix all well together. Add coriander leaves and check for salt. (if want add lemon juice and mix). Heat sufficient oil in skillet & keep it ready. Take a portion of the mixture, shape it to ur choice & first roll it with maida ,then dip it in beaten egg & then roll in breadcrumbs. Press lightly and place the cutlet in the pan. Shallow fry it till both the sides till  golden brown. Similarly fry all  the  cutlets,drain and place on an tissue paper and serve it ....if want dip it in tomato ketchup & taste...
