Shrimp Gravy / Eral Thoku & Sweet Awards....

Due to my friends & family request iam posting this prawn gravy again .... Same method only , the only difference is  the presentation  ....


Ingredients:
  •   Prawn - 1 lb 
  •  Onion(finely choped) - 1 cup
  •  Tomato (big no) - 1 1/2no
  •  RedChilliPowder - 2 tsp
  •  CorianderPowder - 1 tsp
  •  TurmericPowder - 1/4 tsp
  •  GreenChilli - 2 nos
  •  Ginger GarlicPaste - 1/2 tsp
  •  Curry Leaves - 5 to 6 no
  •  Coriander Leaves - 1 stk
  •  Salt To Taste
  •  Oil - 1 tsp
  •  Water - 1/2 cup   
 Method:

         Wash & clean the prawn ,marinate with litte bit of salt & turmeric powder for 5 to 10 mins.Heat oil in a skillet/kadai ,add ginger garlic paste fry for 1 min ,then add the finely chopped onions,curry leaves, 1/2 stk of coriander leaves & fry until onions turn golden brown .Now add the chopped tomatoes & mix well with the onions ,add red chilli powder,coriander powder, turmeric powder & mix all well together ,stir well ,leave the gravy for 5 to 6 mins till it gives out oil on sides . Now add the prawns & mix well with the gravy .,add salt & cook for about 8 to 10 mins in low flame . Don't cook prawn more than 15 to 20 mins.Garnish it with coriander leaves.Serve it with rice,paratha....

Chettinad Chicken Fry/ Kozhi Varuval


Ingredients:

1. Chicken - 6 to 8 pieces

2. Turmeric Powder - 1/4 tsp

3. Ginger - 1 inch

4. Garlic - 4 to 5 nos

5 .Dry Red Chillies - 5 to 6 nos

6. Pepper Corns - 1/2 tsp

7. Fennel Seeds( sombu) -2pinch

8. Shallots(small onions) - 2 to 3 nos

9. Coconut shredded - 1 tbsp

10.CinnamonSticks - 1no

11.Cloves _ 2 nos

12.Cardamon - 1 no

13.Curd - 1 tsp

14.Salt To Taste

15.Oil For Frying

Method:


First clean & wash the chicken pieces ,then marinate it with curd & turmeric powder for 5 mins.In the mean time grind ginger,garlic,dry red chillies,pepper corns,fennel seeds, shallots,shredded coconut,cinnamon,cardamon,cloves to fine paste ,by adding required amount of water.Put this gravy to the chicken,add salt & mix all well to together so that the chicken is fully coated with the gravy & marinate this for about 1/2 hour. Keep oil in a skillet /pan & deep fry the marinate chicken pieces..
No need to add any extra masala powders , if want u can add extra red chillies for ur spicy...This is an easy ,simple fry ...I learned this from my mother-in-law.

My 50th Post --Prawn Gravy / Eral Peyratal

Ingredients:
  1. Prawn - 1 lb

  4. RedChilliPowder - 2 tsp

Chettinad Chicken

Ingrdients 1 :
  1. Chicken - 1 lb

  2. GingerGarlicPaste - 1 tsp

  3. Turmeric Paste - 1/2 tsp

  4. Lime Juice - 2 tsp

  5. Cinnamon - 1 nos

  6. Cloves - 1 nos

  7. Cardamon - 1 no

  8. Bay Leaf - 2 nos

  9. Star Rinse - 2 nos

  10. KalPasi(black stone flower ) - 2 nos

  11. RedChilliPowder - 1/4 tsp

  12. Onion ( medium size) - 2 nos

  13. Tomato (medium) - 1 no

  14. Green Chilli - 1 no

  15. Curry Leaves - 7 to 8 nos

  16. Coriander Leaves - 3 to 4 stks

  17. Oil - 3 to 4 tbsp

  18. Water - 1/2 cup

  19. Salt to Taste

Ingredients 2 :

  1. DryRedChilli - 5 to 6 nos
  2. CorianderSeeds - 2 tbsp
  3. CumminSeeds - 1 tsp
  4. FennelSeeds - 11/2 tsp
  5. BlackPepper - 11/2 tsp
  6. PoppySeeds - 2 tsp
  7. Pottukadalai(split roasted gram) - 2 tsp
  8. FreshCoconut (shredded coconut)- 3 to 4 tsp
  9. Cinnamon - 1 no
  10. Cardamon - 1 no
  11. Cloves - 1 no
  12. StarAnise - 1 no

Method:

Wash & clean the chicken ,cut into medium small pieces.Then marinate the chicken with turmeric powder,lime juice & salt for 20 to 30 minutes. Now roast dry red chilli , cumin seeds, fennel seeds,coriander seeds,poppy seeds, pottukadalai,black pepper, cinnamon, cardamon, cloves, coconut , cloves, star anise untill all turns golden brown & releases oil from it. Then Grind the dry masalas into coarse powder & keep it aside .

Heat oil in a skillet (pan) & add 1 cinnamon stick , 1 cloves , 1 cardamon, Bayleaf ,kalpasi followed by ginger garlic paste ,chopped onions, curry leaves, green chillies & fry till onion turns light brown . Now add the marinated chicken & saute with onions for 5 to 6 mins. Add the chopped tomatoes , salt , 1/4 tsp red chilli powder , 2 tsp grinded masala powder ( if want u can add extra masala powder as per ur spicy taste) & 1/2 cup water .Saute untill the masala turns brown ,Put the stove in medium flame untill the chicken is cooked well.Garnish it with coriander leaves & this is accompanied with white rice , paratha , chapathi & goes on...........

Egg Masala


Got this recipe from my Mom
Ingredients:

  1. Eggs - 4 no
  2. Onion (medium size) - 1 no
  3. Tomatoe(medium size) - 1 no
  4. Ginger (finely chopped) - 1/4 inch
  5. Garlic (finely chopped) - 3 nos
  6. Mustard - 1 pinch
  7. RedChilliPowder - 1 tsp
  8. CorianderPowder - 1/2 tsp
  9. TurmericPowder - 1/4 tsp
  10. CorianderLeaves - 2 stk
  11. CurryLeaves - 5 to 6 nos
  12. GreenChilli - 1 no
  13. FennelSeeds(sombu) - 1 pinch
  14. Oil

Method:

Hard boil the eggs, shell them and make slits on each egg with a thin knife & set aside. Heat enough oil and add the mustard, fennel seeds ,finely chopped garlic , ginger fry them for 2 mins ,then add onions ,green chilli ,curry leaves,little bit coriander leaves & saute them until the onion turns transculent and then add the tomatoes & stir occasionally, until the tomatoes have broken down considerably .Then add the red chilly powder,coriander powder,turmeric powder and salt , cook for few seconds till the oil comes out from the sides ,now add 1/4 cup water & allow it boil for 5 mins ,then drop the eggs to the cooking masala and toss gently until the water get disappears, add finally the chopped coriander leaves and put off the stove..Serve as sidedish for any rice dishes , chappathi, paratha.....
