- Potatoes - 2 nos (cut into medium cube sizes)
- Red Chilli Powder - 1tsp
- Turmeric powder - 1 pinch
- Coriander powder - 1/4 tsp
- Fennel Seeds - 1/4 tsp
- Ginger - 1.5 inch
- Garlic - 5 to 6 nos
- Curry leaves - 4 to 5 nos
- Urad Dal - 2 pich
- Mustard - 1/4 tsp
- Oil for Frying
- Salt to Taste
Boil the Potatoes in water or pressure cook it ( u can also microwave it for 5 to 6 mins ) . Allow the potatoes to cool & then peel the skin ,cut it into medium cube size pieces. To the cut potatoes add redchilli powder(if needed add extra chilli powder ,all depends on ur taste & tolerance) ,coriander powder ,turmeric powder ,salt & mix all together & keep aside. Now grind the Ginger ,Garlic & fennel seeds coarsely (not smoothly ) & keep it ready.Heat oil in a skillet or kadai & to that add mustard ,urad dal & wait till it splutter . Now add the coarsely grinded ginger garlic paste to it & fry it till it turns light golden color . Then add the potatoes,curry leaves & toss it well with extra oil to it & fry until the raw spice smell goes away from it .Close it with a lid & cook it in a low flame for abou 10 to 12 mins. Cook the potatoes until they turn golden brown on all sides (High heat & too much stirring can cause the potatoes to turn black & lose their shape ). Garnish it with coriander leaves .This dish goes well with curd rice ,sambar saatham, pulav ........goes on......
